Portraits and minimum aperture for having all of your subject in focus.

I recently realized that for a certain frame (say a tight face portrait) dof is directly corelated to aperture (relative aperture for crop sensors).

For a tight face portrait one needs f/2.8 to have both the nose and the ears in focus.

My question is for a full body walking person photo what is the limit to have everything in focus?

What about a half body (waist and up) portrait with the person say holding flowers wanting to have everything in focus?
