Canon 80D imaging questions

I have been photographing wildlife not quite 2 years now. I have an 80D & use a Sigma 150-600mm Contemporary lens mostly. I know I still have a lot to learn, but I really take photography serious & I learned a lot.

My question is I get some great shots but I also get some shots where I scratch my head & think how does this look so bad? I know a lot is settings, distance, normal variables as tracking & movement etc. I notice more noise in my shots. I don't really have anything to compare it to since this is the only camera I had other then my sx60 when I first started. I will show the first pic unedited except for Lightroom's import edit & saving to jpeg & the other pic that I did edit. Neither are cropped. I used a fairly decent carbon tripod & manfrotto gimbal to take these shots. I am also using single point focus.

Settings were 1/1600 Shutter, F7.1, 800 iso @ 600mm. This example is not as bad as farther shots but I figured because it is visible without cropping I would post this pic. Obviously it gets much worse at a distance.
I am starting to think the camera is a big part of it? I was going to get a 90D or a 7D MKII but they are about the same price as a Nikon D500 & the D500 seems way better! I have been kicking around making the switch to a Nikon D500 & a Nikon 200-500mm lens A few of my friends have that setup or shoot Nikon & their pics always look sharper to me. In fact almost all my friends shoot Nikon.
