For customers it would be great*.

For a manufacturer it would an endless nightmare because a high mpx count sensor requires a lot more processing power. So Canon would essentially have to develop a completely different camera for each different sensor, with the exception of the outer shell which could stay the same. They could develop 3 cameras, one with low mpx/high fps and deep buffer, one with very high resolution and much lower fps/buffer, and one in the middle of the road. But it would still require them to develop three very differet cameras.

Which brings out the * in my first line: in order to recover development costs and the risk of one of the three models selling well below expectations, the prices would probably have to be outrageous.
