As a SOOC jpg follower, noise is also part of the major concerns to me.

10 bits or 12 bits plays relatively minor part to me, but as a general rule of using crop size sensor, more light is the key on noise control.

When I can get max light, the noise will be less. Under expose the shot too much, or just blindly go for ETTR and relay on pushing shadow in PP does not good for noise sensitive guy.

GX85 has a highlight protection tendency (Multiple metering, zebra at 105% can test it), very often +1/3~+2/3ev can keep noise to reasonable level.

GX7 does not support zebra, harder to test for the exact amount of under exposure tendency. But on my experience +1/3ev will never go wrong.

As long as not taking 0ev exposure too serious, and more flexible on ETTR, the noise on GX85 can be reasonably well up to ISO3200 (ISO1600 for GX7).
