Without knowing what you prefer and can tolerate, most people would recommend “the best”. Only you can decide what is most appropriate for your travel photography.

More importantly, have you had the chance to physically handle those two models and determine your own psychological response to each of them?

I use an X-Pro2 and an X-E3. The latter is smaller, but can sometimes feels “too small” to me when my mind intuitively recalls the heft of the X-Pro2 (or, in your case, that of the D7500). Other than that, the size and weight of the X-E3 are truly an advantage when travel. Also, nobody pays attention to me carrying the X-E3.
