Av mode on M100

Hi everyone. I am a new M100 owner and so far am super impressed with it. But there is one feature that I can't find which I use all the time on my 6D; where you can set both the ISO range and minimum shutter speed in Av mode. On the M100 you can set the ISO range but not the minimum shutter speed. As a result when I am taking pictures of the (usually moving) kids or on the move with shaky hands I find too many shots have (motion) blur as it is automatically selecting quite slow (for me) shutter speeds (1/60).

As a result I shoot in manual, but it slows down the process having to adjust 2 things before snapping a shot. With the 6D I can turn it on (in Av) really quickly adjust the Av with the dial and snap a shot, missing less moments.

Does anyone know why this feature is not on the M100, maybe because it is meant to be an easy to use entry level model? Do the higher end EOS-M system cameras have this feature.

Any suggestions on workarounds or solutions? (Maybe shooting in Tv, but that doesn't always give the Av that I want).
