I'm able to use a 256GB external boot SSD with my 2012 Mac Mini. The refurb 2018 Mac Mini that is replacing it has a 512GB SSD. Everything that does not need to reside on the internal SSD lives on external drives, which is way cheaper than an Apple SSD. You must have a lot of stuff on your internal drive!
