Nikon Z6 Shooting Basketball in a Gym - Need Help on Base Settings

I have been using a Canon video camera all these years but I want to use my new Nikon Z6 but I've been last few times my test video shots are contrasty and I don't feel confident on what the settings should be. I've been testing in 2 gyms so far.

I want everything to stay in focus, meaning all the players.

I've been testing it in manual mode,
I have the ISO set to auto.
I basically take test video adjusting the Aperture dial then Shutter speed dial and later look on my computer.

Even though the gym is not bright, the z6 does shoot well. But sometimes contrasty, too bright.. In another gym it seemed that the colors were little bit too much and also was contrasty (meaning just not super clear, maybe a little ghosting on face)

Not sure that makes sense.

Any suggestions, I need help on where I need to set camera settings.
