Don't spend too much on the internal SSD on the Mini.

My advice is to get the 512gb SSD. It runs plenty fast.
I just checked the 512gb on my own Mini 15 seconds ago. I got reads of 2766mbps and writes of 2032mbps.

You're going to get roughly the same from the Samsung thunderbolt3 drive, so there isn't really a speed advantage to be had by booting externally.

My suggestion:
DON'T get an external Tbolt3 drive unless you have the extra $$$ to toss away.
Get the Mini with the 512gb internal SSD which is WAY large enough for the OS, apps, and reasonably-sized home folder.

If you have a LARGE library of photos and other stuff, get a USB3 SSD 1 or 2tb and use that for storage. That should be plenty fast enough for that purpose.
