Sony A7III or Nikon Z6 for video?

I am considering to upgrade from a Panasonic GX80. I aim for better video capabilities, specifically for demanding scenes like low light and high dynamic range ones. Sony has longer tradition in the video business with established log profiles, etc, but the Nikon seems better spec'd: 10bit hdmi (even 12 is promised!), better IBIS, apparently higher framerate.

I'd also use the new rig for birding with a long telephoto - here the nikon is not very well served with native lenses while the sony 200-600 seems to be a decent deal at a decent price.

Any thoughts supporting the z6? Or shall I be better served with the sony?
