Because a fitted plate doesn't move and you don't run as much risk of over tightening the screw which can damage the device. Most standard Arca Swiss plates are flat and don't have material to prevent the plate from shifting unless it is "firmly" screwed into the device. I use flat plates on some lenses with collars and they have a tendency to shift unless you give the screw a pretty good torque.

Call it insurance.
