For a live histogram in color, assign that function to a function button. I have it assigned to the front function button. Press once and the live histogram appears, press again and it goes away.

See X-T3 manual page 204.

By the way, the electronic level can be assigned to a function button also. It provides left-right and forward-backward level indications so you can use wide angle lenses without lens distortion if you want.

Both of these are different from similar functions that can be assigned to the EVF and LCD. The electronic level in the display setup menu is just a horizon line that turns green when it is exactly horizontal. The live histogram in the display setup menu is luminance-only.  These settings are on manual page 198.
