Bird photography is a specialized field and I don't think any of the options you just gave have enough reach. I shoot with an APS-C 60D with the original Canon 100-400, which is the equivalent of 640mm on a full frame. And there are many times when I would like to have more reach, so I am eyeing the D500 and the 200-500.

You're not going to be happy with the reach of a 200 or 300mm lens on a full frame body, even if you shoot big birds like eagles and hawks.
