All digital sensors cutoff at saturation.  None have any sort of film-like roll-off.

You might be mistaking the in-camera raw conversion engine for a sensor effect.

I just got a 200d / sl2 and find that like the Nikon d5300 i had it overexposes too easily in sunlight

That sounds like a metering issue.  Are you using evaluative or something else?

I've heard of people preferring older sensors- particularly the d700 and 5d 1 as they are nore 'film like'

Those people are delusional.

Today I had my sl2 set up same way and same lens as my sl1 with highlight tone priority. Even with minus 1 ev dialed in it exposed way to hot.
