The limiting factor in DR is shadow performance.
In the case of Engineering Dynamic Range (EDR) we are talking about zero shot noise.
In the case of Photographic Dynamic Range (PDR and similar) we're talking about very little shot noise, just enough to start overcoming read noise.
Full Well Capacity (FWC) is only involved indirectly since a higher FWC usually (but not always) means that shot noise will overcome read noise earlier (higher dynamic range).

Doesn't this chart corroborates why 5DS look noisier as bayareaphoto has pointed out in the DPR studio comparison shot?

No. Shadow improvement shows how ISO variant/invariant the sensor is.

Note the horizontal line for the Z6, especially at high ISO; that's ISO invariance.

I get that the flatness of Z6 shows ISO invariance but what does the difference between 5DS and Z6 at different ISO settings mean?
