Canon-EF lenses better adapted on Sony A7RIII or Canon EOS-R?

I have Canon 8-15mm fisheye and 100mm Macro IS that I use with Metabones 1x Smart adapter or 0.71x speedbooster on Oly EM1II.

I consider now to go for a mirrorless body to use them (and eventually other lenses) with a larger sensor. For both A7RIII and EOS-R I need an adaptor (Metabones V for Sony or the Canon EF-EOS R adaptor).

Can someone compare how the practice is with adapted Canon-EF lenses on these bodies using these adapters (eventually also AR7II)?

I guess that differences may be in AF speed, if any? Additional functions impaired?
