How much do you let your camera do automatically?

How much do you let your camera do automatically?

I do all my shooting in the creative modes:  Mostly Aperture mode with more an more in full manual (time permitting).  I JUST started doing some shooting in shutter priority as well.
Anyway, I have had plenty of times when I leave ISO on Auto, but it can jump all over the place even in broad daylight) and I don’t think I’ve ever taken white balance of AWB, which could explain some color discrepancies (lots of reds and oranges, indoors at night in incandescent light).

What do YOU let the camera handle?

As an aside, any tricks to adjusting white balance to handle situations that might not be obvious, or to create certain desirable affects?  For instance, I saw pics of mountains that were shot in CLOUDY to create warmth vs AWB which (stating that the camera doesn’t know what mountains or warmth looks like), took most of the warmth out of the image and made it look washed out.
