HDR advice

My apologies if this is a stupid question....

I quite like HDR processing and have just started looking at it again.

Initially, the advice seemed to be to put the camera on a tripod and take (say) five pictures at -2, -1, 0, +1 and +2 stops. However, as many modern cameras seem ISO insensitive, is it just as good these days to use the raw file to produce other files (jpg, tiff) at the same settings?

Is there any difference between doing this and shooting five separate images?
