Good aperture to start at?

Hey everyone!

So I’m starting a new project offering portrait photography to underserved segments of the population for free.

I have a Canon 5D Mark IV, Canon 50mm f/1.2L that will use for my portraits mainly.

What is a good aperture to start out at for portraits?Might not take place in a studio but in a well lit location outside.

I don’t feel comfortable shooting at f/1.2 because the lens doesn’t produce satisfactory sharp results for me. I’m also worried I’ll miss focus at such a narrow depth of field.

I have a Canon 600 RT-II speedlite at my disposal too that I feel okay using but I want to use as much natural light as possible with some clients already specifying natural light explicitly.

I just got in to photography and I love the artistic and technical aspect of it.
