The lavender farmers I've spoken with have said to me that the 'weeding' is a necessary part for them to make their harvesting successful, as all the weeds in the lavender when they harvest is a disaster for them. There must be another process or maybe a use for the lavender for farms that don't weed prior to harvest?

That's interesting.  Did not know that.

The other big industry around the Lavender is honey and bee cultivation.  The Lavender naturally attracts the bees, so the bee farmers also grow lavender but likely not for the intention of selling lavender itself.  It could be the more unkept fields are bee keepers or just fields that have grown wild due to spreading.

The honey in the area has a hint of lavender in the taste which is really different and very nice.
