A lot depends on the details of your travel plans.
A classic mistake is to get new camera equipment right before you take a big trip.
Not only do you need to learn the new equipment but if you have a problem with the new equipment when you are traveling getting it fixed can be difficult.
Changing brands and learning the Sony could also take a while, I am sure that they are good cameras but in addition to just being different I have I seen a number of comments about how complicated the Sony menu system is.
Last fall I upgraded from a T3i to a 77D which would be similar to the 80D you are considering. One thing I noticed is that at least to my eyes the noise seems to be a lot better on the 77D and even at ISO 800 I can barely see the noise. I am now shooting at higher ISOs than I used to because the noise seems to be a lot less of a problem to me. You should look at some of the sample images in the tests to see how the noise looks to you.
It is more subtle but the contrast seems to be better too.
I don't know that I would buy a new body just for the image quality but there does seem to be a noticeable difference. I also wanted the better focusing and the higher burst speeds to help me with some shots I had been missing so I had additional reasons to upgrade.
I would be cautious about buying a new 80D now unless you can get a really good deal. At least in the US the prices seem to be dropping because the 90D is being announced soon. I know you are not in the US but in the US they are selling 80D refurbished bundles for less than $700 US and that comes with a years Canon warranty.

A few things that I ran into with the 77D that might also apply to the 80D
1) The reviews for third party batteries were very mixed so I ended up spending more to get a Canon Brand spare battery.
2) I shoot RAw images and I was using an older version of Photoshop Elements. The 77D also uses a CR2 RAW image format but it was a slightly different version which would not work with my old software so I also upgraded that to the new version.
