ISO AUTO Min SS questions

I have an A7iii, I'm usually in aperture priority mode (A) with auto-ISO.

I have the ISO AUTO Min SS set to a convenient custom key (control wheel down) but I'm wondering if there is any way to assign the function to the front or back control wheel so I can directly change it? It seems redundant to have both wheels assigned to aperture.

Also is there any reason that the granularity of ISO AUTO Min SS is in full stops? i.e. 60, 125, 250, 500 etc. Why can't I set it to 160 or 320?

I realise the answer is probably "use M mode" but it just seems the ISO AUTO Min SS function is artificially limited - do cameras from other brands have these limitations too?
