Help With Low/No Light Focusing for Flash Photography

I'm learning how to use off-camera strobes now and want to balance ambient and flash, sometimes even leave it with no ambient at all and only flash (aperture control, ND, etc.). However, it won't focus with no light, naturally.

How do people focus in such situations? It will be illuminated by the flash, but, if I want to shoot anything at f/2.8 and above on the a7iii, it just won't focus, and manual focus isn't always an option at receptions.

Anyone have any suggestions for how to achieve focus?
