You can't do it with the G7.  You can with the G9.  I'm not sure you can do it with the GH5, or any other ILC model.

With Olympus, you can do it with the E-M1 mark II or E-M1x.

This is one of those long standing issues where neither Panasonic nor Olympus showed any understanding of the needs of photographers.  Along with minimum shutter speed settings.  They were slow to add Auto ISO to M mode as well. And while they are finally getting it, they aren't adding those capabilities back to older models.

I wish they would just admit they were wrong and correct it with older models.

You will likely get a lot of un-helpful replies confusing the concept of manual control with M mode and the need to control whatever settings are automated.  Lots of photographers still don't understand.  Ignore them.
