why is it even necessary to put this guy's feet to the fire and make admit to the kind of thing that would only really matter if he was shooting for documentary purposes.

Because he claimed otherwise.

His quote for the photo below:

"This shot has eluded me my entire photographic career. I searched for days to line up this classic tree with the moon. The golden sphere slowly rose in front of me. I pressed the shutter, a feeling I'll never forget. The moon, tree, and earth."

Photographers just called him out on it. The moon is incorrectly rotated.

In art, I say "anything goes" and that's sort of the beauty of it. One might prefer the kind of images that look less manipulated than this guy's work, but that's just a matter of taste and doesn't really get into any argument of ethics....

Agreed. I like his stuff, so do many others. He may be the most successfully selling photographer of current day.

I have no issues with his technique. But I do find it funny when someone makes claims like he and his staff have, then get proven wrong.

To claim that a photo like that is unmanipulated and not a composite is pretty silly. The only thing sillier, I think is to look at something like that and then to believe someone who tells you that it's is unmanipulated and not a composite...
