Greece in late November, Early December

Hello we are looking into going to Greece about 8-9 days around Thanksgiving with the hopes that it will be quieter with respect to tourism.  However, we have heard many things might be closed or that the photo settings might be overcast/rainy.   Athens, Delphi, Meteora and Santorini or Rhodes are what we are considering.

Having read reviews of locations in active tourist season, I wanted to get the groups thoughts on the following.

1.  Will there still be fall leaves or reasonable enough weather in November to get good landscapes?

2.  Are there any other locations that might be better suited to take pictures at given the time of year?

3.  We are also considering a hotair balloon ride, any considerations?

4. Any other locations that might be more photo reasonable during this time period?
