I will check if my camera store has a few demo models to test first.

Ibis is not a must but the panasonic IBIS is nice to have.

I use ultra wide zoom lenses like the sony 10-18mm, panasonic leica 8-18mm or if I take the fuji, the Fuji 10-24mm.

I think I will stick myself to two lenses because it makes my travel less complicated. (Still have a gimbal, drone, gopro, tripod and accesoires to carry). So for the 2nd less I would go for a portrait lens around the 85mm full frame equivalent.

I didn't see a mode dial on the fuji XT-3 btw.

I owned the Pana-Leica 8-18...fantastic lens, a WA/UWA favorite (I've owned a few WA/UWA from Canon, Sony, Nikon and Oly)! Used the 8-18 with my Oly EM1. I currently have the Fuji 10-24..heavier than the 8-18 but just as good, highly recommend it (and Fuji lenses in general). I do have some 8-18 and 10-24 pics in my link below.

Yes those lenses are some of the best lenses for what I do. Mostly landscape and portret. I will have a look at those lenses. I just wished the Fuji has weather sealing so I could leave my camera out when doing timelapses.
