The Nikon D500 is a camera designed for wildlife/sports/action. It has a lowish resolution APS-C for small file sizes, fast image processing, large buffer capacity and high FPS rates. It also has class leading AF.

The Sony A7Riii is a camera designed for landscape and studio photography. It has a high resolution FF sensor which means large file sizes, slower processing rates, etc. You don’t need outstanding AF, FPS rates or large buffer capacity for its target usage. The Nikon D850 is aimed at the same users as the Sony A7Riii.

The Sony equivalents of the D500 are the A6400/6500, although they are very different camera types. The FF Sony A9 is probably closer to the D500 but a lot more expensive..   Another APS-C mirrorless alternative would be the FujiFilm X-T3.  M4/3 also has good wildlife cameras and a better selection of long telephoto lenses than Sony and Fujifilm, but a smaller sensor size.
