A good question. If this isn't for video. there is no reason at all for OP not to be adjusting settings in Manual with Auto-ISO. I thought his complaint only made sense in the context of video shooting.

I agree with what you say, Manual with Auto-ISO should be the way to go when shooting stills in the circumstances he mentions.  The OP speaks about processing raws, which leads me to believe he must be speaking about stills. It had not occurred to me he may have been speaking about video.
