Thanks to this post by Xena777, I was able to use the proper keywords in a google search and found this thread.

Sure enough, as suggested in the thread directly above, when I changed the following, it is now working to my satisfaction.

WRENCH icon > SETUP > BUTTON/DIAL SETTING > SHUTTER AE > Set "AF-S/MF" to ON.

If shooting in continuous autofocus, set AF-C to ON to lock exposure and display the ISO setting on a half-press of the shutter release.

I'm hoping this helps someone else if they are having the same issue.
