A serious question about raw files

I was going to ask this in the thread entitled Just Thinking out Loud but that has several ideas I don't want to get mixed up in.

I am not disagreeing with this in the other thread, it is patently true:

"The point of RAW is to have the most information to use if one wishes."

The question for me is more what you can do with the extra data? Inevitably much of it has to be discarded to reach the display stage be it print or screen. This is for me an absolutely genuine question as for me, most of time the benefit of processing raw files seems modest. That might reflect my ability to process files of course.  So a serious question.   How is the extra work and time rewarded of using raw over OOC jpgs?  What benefits and what doesn't?
