You do this in-camera by using HDR to merge multiple exposures, or in post-process by shooting RAW and upping shadows/dropping highlights. The first example image you posted was done using a flash, either of the methods mentioned above will give you better results with more natural colors and no shadows.

Post-processing can be done to some degree to your JPG, however because it's a compressed format, there isn't nearly as much data that can be recovered versus a RAW:
