What's the ACTUAL difference in video settings - apart from file size?

What's the ACTUAL difference in video settings - apart from file size?

First off, I'm using an Olympus E-M1 Mark II but I'm not sure if that even matters.

The question might seem stupid at first - and maybe it really is. I tested the video quality settings (normal, fine, superfine, ultra) with FHD and 24fps for each video having the same lenght. The "ultra" file is about 6 times as big as the "normal" one but apart from that I can't spot the slightest difference in quality. As far as I know it has something to do with bitrate or so. But even when I zoom in to 500%, push the colors and brightness around and export at crazy quality settings I simply can't see ANY difference in a side-by-side comparison.

Anyone care to enlighten me? What's the point in these ridiculous file sizes when there is virtually NO increase in quality whatsoever?! I'm really confused.
