For some unknown reason Olympus decided you cannot use a delayed release with either HDR nor bracketing.

The solution, use an INTERVALOMETER! It is not operative with HDR, but it is with the bracketing function. The procedure I use is the following:

set the bracketing to 5x 1stop

set the intervalometer to your taste, e.g. minimal interval length if you use an electronic shutter and NUMBER OF FRAMES to just two ( 3-4 seconds interval length if you use a mechanical shutter and/or several seconds of anti-shock time)

That way you can activate the release with a finger and the camera will make just two frames - hopefully both in a perfect register - the first at "0" and the second with "-2 stop" e.g. for the sky.

Now you have to reset the bracketing sequence with a press on MENU or a preview  button because otherwise the sequence will continue - and we want just the first two frames two stops apart.

Of course you can expose all the frames of the set bracketing function but for most landscape uses IMO the two are just right.
