The maximum IPD (or the effective "interaxial") with the Lytros is limited by the effective aperture size of the lens used.  Light field cameras are able to generate stereo pairs by "looking through" the left side and the right side of the lens "hole".  Typically, this is quite small, implying the strereoscopic effect is "condensed" to closer subject matter.

Can the interaxial be adjusted?  It probably can, but there is still a maximum distance as described above.
