You certainly can. There are lots of modern versions of the Holmes Stereoscope. Here's just one example being used with smart phone:

What type of 3D do they use for the book, I'm thinking that laser 3D was used but they mainly use that on just the covers of books.

I must get my local library to see if it's available.
