Old guy needs help!

OK so I've been taking photos for decades. I have a D7100 and have never used Live View before. I'm struggling to 'get it'. I want to take some images, in doors, of small items that are only 2 feet in front of my lens. (Tamron 16-300). I switch to manual mode and try to focus. To get depth of field I'm on f22. I just can't nail the focus. Close ups aren't my 'thing'.

So I try Live View to try to zoom in and 'perfect' the focus. I turn on Live View and use the +  button to zoom in and try to fine tune the focus. All I see is a dark, very pixilated, image. The pixels are dancing around making it almost impossible to focus.

So my dumb question is, 'what am I doing wrong'? I want to learn about Live View. I'm trying to avoid focus stacking.
