Oversampling a noisy signal

Hello all, and sorry to have to ask, but could any of you shed some light on the following problem?

Essentially, is there a significant quantisation noise problem in photography, other than in the last couple of bits?

ie: is there a quantisation error/noise benefit to amplifying your signal to the right ('where the bits are') or does photon shot noise mean you're oversampling most of the tones in your image and quantisation isn't something you need worry about?
