Some people like to shoot where they expose for the highlights (bright areas, sun, etc.) - which typically means under-exposing for the rest (subject primarily) and bringing the shadows back in post.

Skip to 3:20 (between 3:20 and 3:30) and see how he exposes for the sun, making his model completely dark and then he's able to bring those shadows back in post with essentially no loss in quality. (this video is also good - https://www.youtube.com/watch?v=4yx8MEDm-2U&t=226s)

I think of it this way - the more DR a camera has, the more ability you have in post to "recover" some of your details you may not immediately see. Yes it makes for a bit of lazy photography, but you never know when you'll want/need to recover some details in the shadows in post. It can also work beautifully for landscapes shots where the sun is very bright - you may want to purposefully underexpose and then recover the details to create a better image overall.
