Banding and pushing shadows

OK, bear with me here. You are all much more technically astute than I am.

I’m teetering between buying a Nikon Z7 or a Sony A7Riii.

I’m trying to figure out if I’m likely to push shadows enough to end up with banding issues. In this forum I keep seeing phrases like “pushing shadows 3 stops.” My question: what do you mean when you say this? I use Photoshop CC for post-production in RAW. I often lighten shadows through using the shadows slider in the Adobe RAW screen, but that slider uses a percentage from 1-100, not stops. How do you lighten shadows using stops, aside from using the exposure slider (which *does* adjust using stops but affects the entire image)?
