Regarding this subject, both cameras use the same Sony sensor IMX161 (as also Hasselblad and Phase One in some models). This sensor has become the “standard” medium format size in the industry.

However, each manufacturer is free to use the resolution they need.

Please see the following table where you can compare the sensors of each camera:

As you can see, the sensor size is the same for the GFX-50S, 645Z and X1D but the resolution is slightly smaller for the X1D. But all use the same Sony sensor IMX161.

Just for the record, the 645Z was launched in March, 2014, so now is 5 years old and one should expect a new model very soon.

You said that you are evaluating the jump from APS-C to FF or MF.

I suggest you to have a look at the Pentax K-1 MkII (FF, 36MP) as it is specially suited for astrophotography. Pentax has a long tradition (since 2010) in this field with the Astrotracer mode where the Shake Reduction function (IBIS) is used to follow the earth rotation thus avoiding the star trails (within some limits).
