Canon EOS 800D SD Card

Hi Guys

Purchased a Canon EOS 800D DSLR Camera. Not supplied with SD Card. User Manual indicates that you can use a SD, SDHC or SDXC memory card and SDHC and SDXC memory cards with UHS-1 can also be used.

Canon have said they only recommend up to 128 GB capacity. When I asked why, they said because they had not tested cards with higher capacities for performance.

I don't understand why a higher storage capacity than 128 GB [say 512 GB] would make any difference. Can anyone explain why, please?

Also, I gather a Speed Class 10 rating is the best thing to go for but I'm unsure whether to choose a card rated UHS Speed Class 1 or UHS Speed Class 3? I appreciate the EOS 800D can only shoot video in full HD [and not 4k] so there is no advantage there in having UHS 3 but would having UHS 3 be worth having for faster download speeds to PC?

Finally, the UHS Bus Interface ratings leave me cold and I don't know what rating to choose or even if it's supported by my camera?

As you might guess, I'm a newbie to DSLR so any advice/clarity you can provide me would be much appreciated.
