I was in Paris last summer and I had just
Olympus E-M1 Mark II
7-14mm f 2.8 (14-28mm equivalent in FF)
12-40mm f 2.8 (24-80mm equivalent in FF)
And few extra batteries and a charger. I got all the photos I needed/wanted. Simple and nice setup. Olympus IBIS was very nice. I shot mostly architecture, inside museums, sights, general landscapes/cityscapes and a bit of street. Even some candid shots 'cause my setup was pretty small and simple. Hardly anyone noticed that I was taking photos because of silent shooting. Flashes etc I left at home 'cause in many places those are not allowed.
Streets were somewhat narrow so I'd try to take at least something wide and something general purpose. If you really need, then maybe one prime for portraits and low light stuff.
