Firstly, there is nothing wrong or inferior with the APS-C format or cameras. While the notion that APS-C is smaller and lighter than Full-Frame is getting blurred, it's still generally valid. You will have a lighter and less expensive kit with APS-C.

I shot Canon and then Sony APS-C for 15 years. Last year I upgraded from the Sony a6500 to the Sony a7 iii. Dear God, it's a whole new world! Part has to do with the better Sony color science, but the difference in depth-of-field is real and it is not overblown.

I personally cannot go back to APS-C as my main camera.  I do use an Olympus M43 as a secondary camera when I must pack light.  And the difference there is even more so.

I'd take a hard look at the a7 iii plus the Tamron 28-75 lens versus the a6400 and the Zeiss.
