Here's my take.

I shoot weddings and people.

I personally think it is irresponsible to shoot critical events with a camera without redundancy now that  the tech has been out for years.

I know a card failure is 1 in a thousand but how would you like to go to a bride and tell her that the card that the ceremony is on failed.

The other issue is that as I said the tech has been around for a while now so if you end up in in a legal dispute it is going to be tough to justify that single card failed. It was "OK" when there was not that available but tough to justify now.

Also consider your reputation. A local photographer had the card from the reception fail. She got trashed on social media and her name is Mud. She has since pulled her website and stopped shooting the whole event was so traumatic for her.

Personally I use 128GB cards so I do not have to remove them from the camera and always have the cameras on my person to minimise the chances of theft. I see the biggest chance of failure actually removing cards (especially SD card)  and accidentally damaging them/ losing them, dropping them in beer etc. Before you say that could never happen, believe me after 5 hours on your feet, tired and in the thick of it it is easy to make dumb mistakes.
