3D vision seems to come and go

Not true. I have a close relative with amblyopia (vision in one eye only), who can drive quite well! Very careful with parking, too! Never an accident.

Sereopsis is not even required to pilot an aircraft.

This shows the power of monocular depth clues.

I've never tried drying using one eye for safety reasons but assumed that you'd need to know how close objects were to your car. But after thinking more about it there are some motor bike riders with a black patch over one eye.

As the car is moving then it must cause the brain to paint a 3D picture in the mind of a person that can only use one eye. I like to walk past an object while video recording it to give the viewer more of a 3D image of the object.
