All the conversions involve replacing the filter glass over the sensor with glass that allows passage of certain wavelengths of light.
I've had several converted cameras now. First was my old EOS 30D that I had converted with an 890nm filter; that produced black and white only infra red images. Next I got a 730nm converted 450D that produced some false colour images as well, and was much easier to use. What I use now are two Ms, one that's converted to full spectrum recording - that needs a filter on the lens, but can capture UV, visible light or IR with the correct filter, or an unholy mix of all with no filter. And I have a 680nm one for IR  only that's easier to use because it doesn't need a filter.
