Yes. Sure. Read your manual. You can shoot in JPG or in RAW+JPG - where the RAW will be in color, while the JPG will be B&W (and in whatever aspect ratio you wish).

I am pretty sure you will find it under "Photo Styles" in your manual. It is also the first thing on the "Quick Menu" as shipped from Panasonic. You can set a variety of Photo Styles (Vivid, Portrait, Scenery, Monochrome L.Monochrome,...) that will affect the JPGs, but the RAW files will always be just plain RAW - that's why they are prized by many.
