Fantasea setup - Canon G7XII vs Sony RX 100 V - which one?

Long backstory here - in 2016 i purchased my first underwater camera system - Canon G16 with Fantasea housing, big eye lens, macro lens (which honestly i hardly used as i never got close enough to anything without scaring it away), Sea & Sea YS-03 lighting - specifically for a trip to Hawaii.  as someone who never took any "real" underwater images before, other than an inexpensive point and shoot underwater camera with no external lighting,  i was quite pleased with the results - yes, it took some practice, but i was able to get pretty decent shots.  honestly, the highlight of the entire trip was being in the water and taking photos.

I was very excited to use the setup again on my trip to the Galapagos  spring 2018.  on the ship, there was no dunk tank to test the housing before putting the camera in, but i had tested it at home....or so i thought.    of course, i go in the water the first time, ready to get some great shots - camera flooded (this my due to my own stupidity, not a failure with the housing - i had put the "storage" O ring back on the housing 2 years ago and FORGOT to change to the true O ring).  I was devastated of course, b/c underwater photography was going to be one of the main highlights of my trip.

I sent the camera back to get repaired, which of course was not possible, due to salt water corrosion.  I contacted Fantasea who has been helpful.  As i do not want to buy all new lenses, the options they can offer me are another canon setup - the G7XII or (slightly more expensive) Sony RX100 V.   I use an old Sony a57 as my "land" camera (will be upgrading at some point), so am more familiar with sony than canon (although that sony is so old i'm sure the menus have since changed).  my question is this - between the 2 setups...which would you chose and why?  both are nice cameras on land, but underwater.....what advantages does one have over the other?  Ease of use is important, as i don't want to be messing  with lots of settings while i'm underwater and  trying to get a shot of quick moving fish, etc.   i would also be interested in doing underwater video - curious if the video quality would allow one to "freeze" a frame and still get a high quality still shot from it.
