I recall the above S5 Pro DR chart being discussed way back in the forum. It was confirmed that the S5 test results where based solely on the DR100 factory default setting which makes little use of the Super CCD R pixels. The graph should have included the DR400 measurements which would have been far more informative & representative of the S5's extended dynamic range.
DPR tested S5 Pro dynamic range at nearly 12 stops for JPEG with a smooth roll-off in both shadows & highlights. Not too shabby even by modern standards plus no harsh ugly highlight clipping.

Same with the new Fujis....all at DR100. We can test at DR400 for each as well...but the CMOS still stays ahead by the same spread because the noise floor is lower to start with. So the DR100 comment is irrelevant to the discussion...and the S5 still is behind current CMOS tech....DR, highlights and all.

That part of your statement is not correct. It would mean the S5's sensor would never fully employ its 6 million "R" pixels. This makes no sense at all. The little guys in the below illustration are designed to capture detail above the saturation point of the other 6 million "S" pixels. It is the "R" pixels above DR100 that give the S5 Pro its excellent highlight range plus their soft roll off. Genius engineering by Fuji and well ahead of its time.
In contrast, DR settings for the Fuji X CMOS cams are algorithms which manipulate the exposure to preserve highlights. I am quite familiar with the X-E1 and X-E2 DR settings and settled on DR100 and expose for highlights, easy enough to do with the EVF. Not too crazy about shooting at ISO 800 (DR400) on bright sunny days.

I have a pair of X-E1s (also owned the X-E2) and a pair of S5 Pros. Both a great cameras capable of beautiful photos. The stuff above is fine for discussion but at the end of the day, use whatever one enjoys.
